Tasty Tuesday: What’s for lunch?

Whether you eat lunch at home, in the car, or at work this mid-day meal is sometimes a tricky one. “What’s for lunch?” can be the dreaded daily question and not having an answer can lead to making unhealthy choices, like heading to the drive thru instead of your refrigerator.

Planning healthy lunches doesn’t have to be stressful, take a lot of time, or cost a lot of money. With a little planning, you can quickly prepare lunches and be ready (and excited) when  lunchtime comes around.

I don’t know about y’all but I am busy and need stuff that is FAST. So I LOVE just throwing chicken in a crockpot in the morning… then with another crockpot throwing in more chicken. I made chicken/carrot/celery soup, chicken for salads, chicken for Hawaiian haystacks, and chicken taco soup to freeze for in the future.

Seriously, makes meals so easy and fast! you can never have too many crock pots. Trust me— they really come in handy!!

Use your chicken you prepped earlier in the week for upcoming lunches and dinners!

5 Days of Healthy Lunches:

Most of these lunch ideas can easily be prepared ahead of time (like on Monday) in your airtight storage containers. With the prep-work out of the way, lunchtime will be a breeze!

Monday:  Pita pocket stuffed with hummus, cubed chicken, grated cheddar cheese, lettuce, tomato, and red pepper with celery sticks dipped topped with some kind of nut butter.

Tuesday: Mandarin Salad-lettuce with cubed chicken, orange slices, and cashews (top with a low calorie-lite dressing if desired) eat with a side of berries

Wednesday: Chicken Salad- cubed chicken mixed with plain Greek yogurt, green onions, and red grapes. Spread on whole wheat crackers. Serve with fruit and/or a boiled egg

Thursday: Cheddar & Cherry Tomato Kabobs- skewers made with cubed cheddar cheese and cherry tomatoes served with carrot sticks, and red, orange, yellow peppers dipped in hummus.

Friday: Taco Salad: cubed chicken sprinkled with Mrs. Dash’s Southwest Chipotle blend seasoning mixed with lettuce, cherry tomatoes, shredded cheddar cheese. Top with salsa if desired. Serve with pita chips and a fruit side.
