It’s Tuesday again, and if you’re like me you might be looking for an easy mid-week meal to throw together. I love this recipe for two reasons: 1) It’s easily adaptable for the size of your family (just add more chicken & veggies for larger families) and 2) It’s healthy! This recipe literally has no added seasonings whatsoever and it tastes incredible! This recipe was adapted from Shazzy’s Sass.
Artichoke Chicken Recipe
1 Can artichoke hearts, chopped (save the brine)
3-4 (or more for a bigger family) bonless, skinless chicken breasts, thawed
2-3 pieces fully cooked, low sodium bacon, ripped into small pieces (I love that bacon comes this way! I hate cooking bacon because it’s so greasy and unhealthy. Plus, it stinks up my house and I hate that. Buying it fully cooked means less grease, no smelly house and the lower sodium is great too!)
1/2 an onion, thinly sliced
*if you don’t care for artichokes, you can use the juice of half a lemon and thinly sliced lemon pieces instead to get the tangy flavor
place half of your artichoke brine, chopped artichokes, sliced onions, and bacon pieces in the bottom of your baking dish. Layer chicken breasts on top. Place the rest of the artichoke brine, chopped artichokes, sliced onions, and bacon pieces on top of chicken. Bake uncovered at 350 until chicken is done (20-30 minutes)
The chicken turns out perfectly moist and is so full of flavor with all the yummy chopped veggies and just the right amount of bacon flavor. This is one meal that will become a go to recipe on busy nights!
