Gluten Free Baked Chicken Recipe

Sometimes I feel deprived by knowing that there are many foods I can no longer eat.  No, it is not because of a diet to loose weight.  I do try to live a healthy lifestyle! But it is from hearing that I have an mthfr gene mutation disorder that prevents me from eating many different types of food (anything with folic acid).  So I have been playing around with different ways to change things up so that I dont get bored of eating the same things all the time!

Who says you cant eat healthy or grainless (for those who need to), without it being boring?
Here is a recipe for baked chicken without using regular flour!

INGREDIENTS:
– 8 Skinnless, Boneless Chicken Thighs
– 2/3 Cup Almond Meal

-1/3 Cup Coconut Flour

– 1/2 tsp salt

– 1/2 tsp garlic powder

– 1/2 tsp dried parsley

– 1/4 tsp dried oregano

– 1/4 tsp onion powder

– 2 eggs

– 1 Tbs Organic Coconut Oil (melted)
DIRECTIONS:

Preheat oven to 375F and line a baking sheet with parchment paper.

Combine almond meal, coconut flour and all spices on a plate and mix.

In a separate dish, beat the eggs and add the melted coconut oil.

Dip the chicken in the egg, then dip into almond meal mixture, making sure the entire piece is coated.

Then Place on cookie sheet and repeat with all other chicken thighs.

Bake for 15 minutes, FLIP and bake for 15 minutes more.  Then Flip and cook for 5 minutes, then repeat by Flipping all the chicken and cooking for 5 minutes more.

You can then eat plain OR top with some red sauce, mozzarella and cooked mushrooms.
